To start the day with a cake..such a nice idea! This chocolate tart is super easy and delicious. The secret ingredient is avocado and this chocolate mousse melts in your mouth.
This recipe is vegan, no baking, sugar-free. Also, it is gluten-free and it can be used in a keto diet.
Yesterday my mom asked me: ‘Why do you prepare so many vegan desserts when you are not vegan?’ The answer is very simple – I love the texture of raw nuts, dates, cacao. I love the idea of being healthy and guilt-free.
I had a few ripe avocados and I decided to use them in a dessert variation. I saw a similar recipe, but I substituted all the ingredients with the ones from my cupboard. So today I share it with you.
For the crust:
- 150 g raw nuts ( I used pecans)
- 110 g Medjool dates ( You can use maple syrup, honey, agave, etc)
- 2 tbsp raw cacao
- 20 g coconut oil/butter
- 45 g coconut flour
For the mousse:
- 170 g ripe avocado (2 avocados)
- 100 ml nut milk ( I used a cashew one)
- 40 g raw cacao
- 50 g honey
- 45 g coconut oil/butter
Instructions:
Soak the dates in warm water to be easily blended. In a food processor, put the dry ingredients for the crust – the nuts, cacao and the coconut flour. Add the dates, drain the water off and the butter and mix. It should become like a sticky dough. In a 20 cm pan over a baking paper, put the dough and press it, until it covers all the bottom and a bit from the walls. Place it in the fridge to set.
In the same food processor, add the avocado flesh and all the ingredients for the mousse. Blend until it looks consistent and pour it into the chocolate crust. Sprinkle chopped chocolate, coconut, nuts or whatever you like and leave for 4 hours in the fridge.
